Jen’s Easy Cruffins

I know I’m a bit late to the party, but these are super easy and more importantly, super good……

  • 520g Strong White Flour, plus extra for dusting
  • 240g milk
  • 100g of caster sugar
  • 2 eggs
  • 60g soft butter
  • 7g dried yeast
  • zest of one orange
  • 90g of butter melted

Step 1

Mix the flour, yeast, 60g soft butter, eggs, milk, zest and 50g of the sugar together in your mixing bowl.


Step 2

Using your dough hook, start slowly then increase the speed as the dough becomes more elastic and smooth.  Once the dough is almost smooth and wraps around the hook, place it back in the bowl and leave to prove, covered until doubled in size.


Step 3

Once your dough has doubled in size remove to a well floured surface and divide into 12 pieces.


Step 4

Take one piece at a time and roll out into a thin rectangle on your well floured board.


Step 5

Move it off the flour and brush liberally with your melted butter. Roll up like a Swiss roll and then cut straight down the middle (see video)


Step 6

Roll this up again with the cut side OUT (again see video!) and place carefully in your well buttered muffin tin


Step 7

Cover loosely with cling film and place in the fridge overnight.


Step 8

Next day, set your oven to 180ºC. When it is fully heated remove the cling film and put your cruffins in your bake for 20 minutes or until golden brown.


Step 9

Working quickly, put the remaining sugar in a bowl and  dip and roll each cruffin in the sugar.


Step 10

Serve warm with butter and a jam of your choice. Divine.
